One Local Summer: week 5

My one local summer meal this week had to contain corn on the cob, of course. It finally showed up this week, just in time for the Fourth of July like it always does. Really, I think I could eat an entire meal just of Jersey Fresh corn on the cob. But, I didn’t serve it alone.
I served it with soft tacos made from local ground beef fresh Jersey tomato, sauteed

onion and red pepper, and cheese. The beef and vegetables were all bought at the farmers market. The tortillas and cheese were not local.
According to my ten year old, it was a “really, really, really, really good dinner.”
I can’t wait till Saturday morning to get to the farmers market for some more corn!
