The locavore in winter: Maple syrup

I read a piece on Change.org’s Sustainable Food blog today about maple syrup. According to them, the maple syrup industry is inherently sustainable.

Tapping trees does not damage them, and the profitability of their continued health is motivation for preservation of sugar-bearing forests. Linking forest protection to economic benefit helps maintain carbon sinks to combat climate change.

I’ve never seen any New Jersey maple syrup, but I thought I’d search around to see if I could find any local producers. It’s one of those food items that can be bought year round. For those of us who want to continue our locavorism into the winter months, it’s a good option.

Here’s what I came up.

Iceburg Farms – Howell, NJ

Three Pines Farm – Jackson, NJ

If anyone knows of other local sources or where to buy the maple syrup from these farms during the winter, let us know.
