I had a butternut squash sitting in my kitchen for well over a month, waiting for me to do something with it. When Jerry Stone of Cooking Stoned put a video showing how to make Caramelized Butternut Squash on Google+, I knew what I was going to do with it. The hardest part about this recipe is cutting up the squash, but this four ingredient dish is definitely worth the effort. The end result is a delicious, sweet side dish that has all the appeal of candied sweet potatoes with none of the carbs.
