I got back yesterday afternoon from a wonderful weekend in New York City, and honestly, it hadn’t occurred to me that I was going to have to cook dinner after eating eating my way up and down Manhattan for three days straight. So I was very happy to get some inspiration from my friend Dennis who blogs at a Culinary Journey with Chef Dennis. He posted a Deconstructed Chicken Stew recipe on his blog, and it looked so delicious. We made it for dinner last night, and it was so delicious. I changed a few things based on what I had in the house. I used chicken breasts instead of chicken thighs. His recipe calls for a mushroom gravy, but I know my boys wouldn’t have eaten that. So I made a chicken gravy instead. Also, I was out of celery so that got left out. Everyone loved this twist on a comfort food favorite.
